Tomatillo Soup

Tomatillo Salsa Makes 1 pint
INTRODUCTION
This unique low-fat salsa explodes with flavor using ONLY fresh vegetables and herbs! Tomatillo means little tomato in Spanish. They are rich in potassium and have only 11 calories. In addition, tomatillos contain vitamins C & A, calcium, and folic acid.
INGREDIENTS
1.   6 tomatillos, chopped
2.   3 red peppers, chopped
3.   1 yellow sweet onion, chopped
4.   1 anise bulb, chopped
5.   2 Tablespoons ginger, minced
6.   1 clove garlic, minced
7.   ¼ cup mixture of fresh minced thyme, basil, rosemary, and sage
INSTRUCTIONS
PREPARE
Equipment: Chef knife or food processor
PROCESS
Pulse chop all ingredients in a food processor to reach a fresh salsa texture. Alternate method: dice all ingredients and toss. Refrigerate to blend flavors.
PRESENT
Serve with fresh corn chips in a wood, chip & dip bowl.
