INTRODUCTION

This soup is a rich and creamy soup without the extra fat. Zucchini contains large amounts of folate, potassium, and magnesium. Folate helps prevent heart attacks and strokes. Potassium and magnesium are helpful for reducing high blood pressure.

INGREDIENTS
|

1. 6 zucchini, peeled & chopped
2. 6 stalks celery, chopped
3. 3 cloves garlic, pressed
4. ¼ cup lemon juice
5. ¼ cup Chickpea Miso
|
6. 3 cups water, add to thin
GARNISH
7. 4 tomatoes, seeded and diced
8. Garden of Life’s Coconut Oil, drizzled
9. Garden of Life’s Super Seed, sprinkled

INSTRUCTIONS

PREPARE
Equipment: Citrus juicer and Vita Mix
PREPARE
Juice lemon and prepare vegetables. Blend first 6 ingredients in a Vita Mix until smooth. Chill to refrigerate or warm on a stovetop to 100°, stirring constantly.
PRESENT
Serve soup with diced tomatoes and GOL’s Coconut Oil and Super Seed.
