Shiitake Chow Mein

INTRODUCTION
|

An old ancient Chinese custom says the length of the noodle determines one’s life-span. This raw version, rivals the classic in taste and length of noodles, but longevity in this raw dish, is due to the live nutrients, enzymes, and fiber.

INGREDIENTS
|
|
NOODLES
1. 2 parsnips, spiralized
2. 2 carrots, spiralized
3. 1 zucchini, spiralized
4. 1 cup Mung bean sprouts
5. ½ cup julienne jicama
SHIITAKE
1. 2 cups sliced Shiitake mushrooms
2. 2 T. Spice Hunter poultry seasoning
3. 2 T. Spice Hunter poultry grill/ broil
4. Celtic salt, to taste ~ opt.
5. Fresh ground pepper, to taste ~ opt.

ORIENTAL DRESSING
1. 1 green onion, chopped
2. 3 sprigs cilantro leaves
3. 2 Tablespoons lemon juice
4. 2 Tablespoons wheat-free Tamari
5. 2 Tablespoons raw sesame oil
6. 1 Tablespoon toasted sesame oil
7. 1 T. Garden of Life’s Hawaiian Honey
8. 1 teaspoon minced ginger
SEED GARNISH
1. 2 T. unhulled sesame seeds or hemp seeds
2. 2 Tbsp. Garden of Life’s Super Seed

INSTRUCTIONS

PREPARE
Equipment: Vita Mix, chef knife, peeler or paring knife, spiralizer, or shredder, kitchen shears
PROCESS
To make noodles, spiralize, combine, cut long noodles, and set aside in mixing bowl. To make Shiiktake, combine ingredients and toss with noodles. To make the dressing, blend ingredients in a Vita Mix and coat the noodles.
PRESENT
Serve a bowl of noodles garnished with hemp seeds, sesame seeds and Super Seed.
