Apple Spice Cake

INTRODUCTION
Apple Spice Cake can be made from left-over Apple Pear Sauce. Ap
INGREDIENTS
CAKE LAYERS
1.   2 cups left-over Apple Pear Sauce
2.   1 cup soaked & dried pecans, ground
3.   6 dates, soaked or 1/3 cup date paste
4.   1 scoop Garden of Life’s Super Seed
5.   1 Tablespoon cinnamon
6.   1 Tablespoon vanilla
7.   ½ teaspoon Celtic salt
ICING
1.   2 cups pine nuts, soaked
2.   2 pears, peeled and chopped
3.   ¼ cup GOL’s Hawaiian Honey
4.   2 Tbls. GOL’s Extra Virgin Coconut Oil
5.   1 Tablespoon vanilla
TOPPING
1.   1 cup mix chopped pecans & walnuts
2.   ¼ cup GOL’s Hawaiian Honey
3.   1 ½ teaspoons cinnamon
4.   ½ teaspoon Celtic salt
GARNISH
1.   1 full slice of pear with stem and seeds per person
2.   sprinkles of cinnamon per person
INSTRUCTIONS
PREPARE
Equipment: Vita Mix or food processor
PROCESS.
Blend Cake Layer ingredients until smooth. Spread 2 cups cake batter on a solid sheet and dehydrate @ 105° for four hours. Flip and continue until dry. Blend icing ingredients in a Vita Mix until smooth, reserve some for garnishing slices. Place in the freezer to firm while layers are drying. Assemble cake alternating between cake layers and icing until 3 to 4 inches in height. Freeze and slice for a quick healthy dessert to serve. Combine topping place in the freezer to firm. When ready to serve, remove cake and slice while frozen to reveal the beautiful layers.
PRESENT
Sprinkle Apple Spice Cake with topping, and garnish with a slice of pear and sprinkled cinnamon. Drizzle with reserved icing.
